Best Carrot Cake (or Muffins!) Ever

If you’ve been following our Instagram<\/a><\/strong> stories, you’ll know that we recently shared the best carrot cake muffins ever. And by the best, I mean they’re both delicious and apparently very lucky. Every time I’ve made this carrot cake recipe as muffins with these amazing football-themed sprinkles<\/a><\/strong>, our favorite football team wins, and now they’re in the Superbowl \ud83d\udc40<\/a><\/p>\n\n\n\n

Now I’m not saying we’re superstitious. But I’m also no dummy, so you can bet I’ll be making these things again for the big game. I’ve also gotten a few requests for the recipe, so I wrote it all out for you fine folks who might also be looking for that… competitive edge.<\/p>\n\n\n\n

Kid-Friendly Carrot Cake for Easter<\/h3>\n\n\n\n

In addition to football-related muffins, we also make this carrot cake recipe in two-layer cake form every year for Easter<\/a><\/strong>. It’s a perfect Easter dessert that’s relatively easy to make. The kids love to help shred the carrots, which has also encouraged them to try some fresh carrots on the side as a snack (double win!)<\/p>\n\n\n\n

Since I’m an honest kinda gal, I’ll admit I usually prefer cooking over baking, because precision is, well…boring. But this recipe is easy and well worth the effort. Over the years we’ve worked out a few kinks and think we’ve come up with the best carrot cake ever. <\/p>\n\n\n\n
